Son Halwa (also known as Suhal Halwa or Suhal) is a traditional Indian sweet dish made from sattu (roasted gram flour), ghee, sugar, and dry fruits. It is often associated with North India, particularly Bihar, Uttar Pradesh, and Madhya Pradesh, and is prepared during festivals, special occasions, or as a celebratory treat.
The name "Son" refers to the golden color of the halwa, and "Halwa" is a term used for a variety of dense, sweet, pudding-like desserts in Indian cuisine. Unlike other halwas made with ingredients like carrots or semolina, Son Halwa is distinct because of its use of sattu, which imparts a unique flavor and texture to the dish.
Sattu (Roasted Gram Flour): Sattu is the star ingredient of Son Halwa. It's made by roasting chickpeas or other pulses, grinding them into a fine flour. This flour gives the halwa its grainy yet smooth texture and a nutty flavor.
Ghee: Used to cook the sattu, ghee adds a rich, aromatic flavor and helps achieve the characteristic smooth texture.
Sugar: Sweetens the halwa.
Cardamom: A hint of cardamom is often added for fragrance and flavor.
Dry Fruits: Typically, cashews, almonds, and raisins are used for garnishing. These add a nice crunch and depth of flavor.
Milk (optional): Some recipes call for a bit of milk to make the halwa creamier.
