As the season settles in, our bees forage across the farm and into the surrounding bushland, gathering nectar from flowering Moonah, Wirilda, Boobialla, Coast Saltbush and Coast Bearded Heath, species that define this rugged coastal landscape.
The result is a deeper, more complex honey, rich gold in colour with layered, resinous floral notes and a lingering warmth on the palate. It carries both the cultivated abundance of the farm and the wild character of the coastline, reflecting a landscape at its summer peak, generous, windswept and alive.
When this honey naturally begins to crystallise, simply place the jar in a bowl of hot water and allow it to gently return to its smooth, flowing form. Crystallisation occurs as the natural sugars form fine crystals over time, a quiet reminder that this honey remains pure, minimally handled, and just as the bees made it.
