Like organic premium matcha, this organic matcha for lattes and culinary grade cooking is the result of a blend by a tea master, with the difference that the tencha tea leaves used are of lower quality than those used for organic premium matcha.
The difference between organic premium matcha tea and organic matcha for lattes and culinary grade matcha is like the difference between a fine wine and a cooking wine. They are two different products for different uses.

In the photo above, we have several harvests of tencha that have been sorted for quality from left to right.
In the top plates, you can view the tencha leaves that have been dried and lightly crushed. And then in the square trays, there has been an additional crushing step, which is the step just before grinding into fine matcha powder.
The left column is less green than the middle and right columns: this is our organic matcha for lattes and culinary grade matcha. Since this matcha is intended to be mixed with other ingredients in a recipe (such as a cake, smoothie, latte, pastry, etc.), it does not need to be as fine and refined as our best matcha, but rather its aroma and flavour should be able to balance with the other ingredients.
My goal with this matcha is to invite you to experiment, but if you're looking for ideas, I work with talented creators to develop organic matcha recipes, and to date we have published more than 80 unique recipes: pastries, drinks and lattes, savory recipes, cakes... And we're still going strong!
Some of my favorite recipes:

Preheat the oven to 180°C. Butter a square mould.
To make the matcha green tea brownie, whisk the eggs and sugar until frothy in a large bowl. Stir in the melted butter.
Sift the flour and matcha tea powder, and mix.
Add the melted chocolate and salt.
Pour the batter into the mould and bake for about 25 minutes, until the top begins to brown and the centre is firm when tested with the tip of a knife.
Remove from the oven and allow to cool completely before slicing and serving the brownies.
In a saucepan, gently heat the plant-based milk with the rose petals to infuse.
Once the milk is hot, remove the pan from the heat and let it rest for about ten minutes.
Pour the organic matcha powder for lattes and culinary grade matcha into a bowl and add 25mL of hot water.
Mix the matcha with water using a traditional bamboo whisk, called a chasen, or a regular whisk, until you get a smooth mixture.
Then pour the infused milk into glasses, filtering out the rose petals beforehand. Add the matcha tea and honey to the mixture.
Prepare organic matcha for lattes and culinary grade matcha by mixing it with 25 ml of hot water using a traditional bamboo whisk until there are no more "lumps" of tea.
Heat the milk in a saucepan.
Add the white chocolate pieces to the hot milk and melt, stirring constantly.
Mix the matcha tea with the chocolate mixture.
Pour the mixture into two glasses and decorate with mini marshmallows.
Tip: Toast the marshmallows using a culinary grade blowtorch.
